Sprigg opens first Glasgow West End store on Byres Road
Glasgow salad bar Sprigg is expanding beyond the city centre for the first time, with a new West End location opening on Byres Road at 12pm on Wednesday 22 July 2026.
The new restaurant, which takes over the former Park Hi Tea premises, will be Sprigg’s fourth Glasgow branch and joins its existing locations on Ingram Street, Sauchiehall Street and Waterloo Street.
Customers will be able to order from Sprigg’s complete menu, including freshly prepared build-your-own salad bowls, baked potatoes, homemade soups and focaccia.
Glasgow-inspired interiors
The Byres Road restaurant has been designed with the surrounding area in mind, with interiors inspired by Glasgow’s traditional tenement closes.
Features include individually laid floor tiles, customer seating, contemporary furnishings and Sprigg’s distinctive salad counter.
The company worked with Glasgow City Council’s planning department and Friends of Glasgow West to help ensure that the new store respected the heritage and character of the area.
Tom McDermott, founder of Sprigg, said: “We’ve been working hard behind the scenes to bring Sprigg to the West End, so we’re delighted to finally be opening our doors on Byres Road.
“The response we’ve had from local people and businesses has been fantastic, and it’s been great to see how much excitement there is around the opening.
“This was really important to us, and we worked closely with Glasgow Planning and Friends of Glasgow West to ensure the shop honours the heritage of the area and contributes to the streetscape.
“We can’t wait to welcome people through the doors and become part of the West End community.”
Sprigg expands across Glasgow
Sprigg opened its first restaurant on Ingram Street in 2018 and has since developed a loyal following for its freshly prepared, made-to-order lunches.
The Byres Road opening follows several months of work to transform the former tearoom into the company’s first restaurant outside Glasgow city centre.
