Fire, smoke and big flavours return to Glasgow

One of the chefs making their Meatopia Glasgow debut this year is Jake Clayton, executive chef at The Loveable Rogue.

Known for hyper-seasonal dishes packed with bold flavour, Jake previously worked in several Michelin-starred and five-star kitchens before moving north to Scotland, where he helped launch Glasgow restaurant Brett after time spent at Cail Bruich.

“I’m genuinely buzzing to be joining Meatopia in Glasgow this June. Cooking over fire is one of the most honest, instinctive ways to cook — there’s nowhere to hide, just skill, timing, and respect for the ingredients.”

Also joining the line-up is Lee Murdoch from Ondine at Seaton House in St Andrews.

Lee brings extensive international experience from kitchens across the UK, Asia and the Middle East, alongside a passion for sustainable and ingredient-led cooking. During his time in Abu Dhabi, he won Best Steakhouse in the BBC Good Food Guide before later working in London, Manchester and New York.

“Live-fire cooking has always been something I’m deeply passionate about. There’s a real honesty to it; no shortcuts, just great produce, fire, and skill.”

Qasba brings Saharan-inspired cooking to Meatopia

Another standout addition is Louisa Boulazreg from Qasba in Glasgow’s Southside.

Inspired by Saharan desert cooking and Touareg heritage, Louisa’s food blends flavours and influences gathered through travels across North Africa, South America, Spain and Mexico, all while showcasing seasonal Scottish produce.

Since opening Qasba last year, the restaurant has earned praise from food critics and built a loyal following through sold-out supper clubs and immersive cooking workshops.

“Cooking over fire is where everything feels most honest. It connects you to instinct, to ingredients, and to the landscape they come from.”
